FAR be it from me to attack an icon (and anyway, I’ve eaten my share), but the common pancake is little more than a vehicle for maple syrup. Without that and careful browning in butter, it’s a total bore.

Here in Belgium, though they call it a pancake (pannenkoek), it is what we Americans call a crepe, and they don't eat them with maple syrup--they use brown sugar. Too add to the insanity, it's what they serve at birthday celebrations in lieu of a cake.
I haven't missed American pancakes at all until you posted this.
