We've just finished making a massive amount of chicken paprikash to take to a soup kitchen in a few minutes (and we have the noodles, caraway and butter to cook down there).

If I'd known about Escoffier's birthday, we might have made it turkey tetrazzini (which, using the original Escoffier recipe, is *amazing*!).

I'm surprised. In my schooling on culinary history, this gentleman was accorded that honor, Antonin CarĂªme. He, IIRC laid out and tested the starts of modern French cooking.
