eGullet and the New York Times
After actually having been in Vietnam, I'm amazed at all the reviews of restaurants there. They talk about Pho stands as if they're standouts. If you take that the average business (with the house on top) in Vietnam is probably 8 to 16 feet wide, and every 5th or tenth space is a building that houses an establishment that serves Pho (and some of them are 3 foot vendors on the street) and that Siagon (or HCMC) has multiple districts, one of which is, I think frequented by tourists, they're all fucking crazy. The NY Times can get by with it, but the rest of them? I can not imagine trouping to a pho stand that can beat the 500 I'll find between where I was and where it is. Unless, of course, if I'm in Hanoi, where the broth really does taste like dishwater...
