Why bother to write an article on how you failed to make vinegar? Why doesn't the author collaborate with his photographer colleague, the one who succeeded in making good vinegar, figure out what the secret was that he missed (was it only not allowing enough time? Doesn't sound like it) and write a story on how to do it right?
