Tips: To seed a pomegranate, fill a large bowl with water. Lightly score the fruit into quarters from crown to stem end, cutting through the skin but not into the interior of the fruit. Hold the fruit under water, break it apart and use your hands to gently separate the plump seeds (arils) from the outer skin and white pith. The seeds will drop to the bottom of the bowl and the pith will float to the surface. Discard the pith. Pour the seeds into a colander. Rinse and pat dry. Seeds can be frozen for up to 3 months.

Faster method - cut the pomegranate in half at the equator, pry interior open a bit, invert each half (one at a time) and wail on the skin with the back of a wooden spoon to loosen the seeds -- seeds pop right out.

Economy isn't always a virtue -- your endorsement is certainly more compelling for having spent the time to give more context. Funny story - I discovered the spoon method only earlier this month. I was getting ready to do a citrus-and-pomegranate seed salad for Christmas Eve dinner (another way in which we were on the same wavelength apparently) and was looking on YouTube to find a demo of the water method, and none of the ones I saw were quite what I remembered (i.e. what Larry describes) but there was also a video of a guy who claimed his was the fastest method, and it was indeed fast and looked less messy than any of the others even, so I figured, what the heck? And so I tried it and liked it.

Another method is to cut the pomegranate in half (yes, some of arils will be cut, but there's always some loss in any method), then hold the fruit cut side down over a bowl and whack the rind with a wooden spoon. I've heard about this technique for years, but it always sounded too wacky (whacky?) to be real. But when I read in one of the Ottolenghi books that it's Sami's preferred method, I decided there must be something to it. So I finally tried it this year, and it works great! What I especially like is that the indirect blows work the seeds loose from each other as well as the rind and pith very nicely. I actually like it better than the water technique.
