I'm always surprised how sweet the purple sweet potatoes from the asian markets are. (I'm guessing they're sweet potatoes and not yams because they have white skin.) I came across two recipes for ice cream. Link 1

I love purple sweet potatoes. Have you seen the Hawaiian ones that are a glorious deep purple all the way through?

And yes, those look like Ipomea batata, not Dioscorea alata to me. But the commercial ice cream I've seen has usually been made with the latter (ube/ubi), as are the recipes you link to. I suppose you could make ice cream with sweet potatoes, though. Why not? Keep me posted!
