I made lemon-mint couscous with summer squashes and chevre. It came out pretty well.

The British cookbooks often say mint can be substituted for basil in any recipe. (Well, at least Elizabth David does if I remember correctly.) I personaly believe mint should only be drowned in bourbon with sugar and ice in nice silver glasses shortly before the Kentucky Derby is run, but each to their own.
