I have a recipe for beet salad with green onions, parsley, orange (both fruit and zest), garlic, and a walnut-sherry dressing. I really like it. This sounds good and similar!
Thanks, I'll try that with my current planting of beets ('Chioggia'), with the modification of steaming the beets because they're young, small, and tender. And I'll probably add the chopped & blanched tops as well.
