Thinking, this ain't suburban food.

I made three dressings:

EVOO
Garlic
Salt
Moutarde de meaux
Balsamic vinegar
Tabasco
for the green beans

Peanut oil
Vidalia onion
Red curry paste
Salt
Garlic
Cook & add (at the end):
Lime Juice
for the yard-long beans

EVOO
Moutarde de meaux
Lemon thyme
Lemon zest
Lemon juice
Salt
Tabasco
for the wax and broad beans

And they pretty much ate the plate I sat out. And took a bunch when I left.

The broad beans tasted a little under salted and lemoned, but they kept their color. The yard-long beans had a bit of a kick, but not top of the head. That one I cooked.

All those sound interesting, & I'll likely adopt modifications of them soon (omitting things like curry & tabasco). I've been harvesting about seven varieties of green beans (which includes burgundy and yellow) for weeks, now, and am getting tired of olive oil & vinegar, tahini, baba ganoush, and mayonnaise & mustard dressings. Or maybe of green beans, although there are just a few plants of each variety, the yard-long aren't even blooming yet, and some days only enough for a single serving are ready for harvest. (Generally I steam them, rather than boil, and douse them in cold water just as the bright-green stage begins to pass, not being fond of many vegetables at the half-cooked stage.)

Don't skip the Tabasco

Just use a drop or two. You won't get any heat out of it, but it helps with flavors. I'd probably not do the curry often either (I had to cook it, after all), although I wanted two bold and two bright beans. I still use Julia Child's boil & cold water routine. I find it easier to test the boiling beans. You do get to pick your own style of doneness, but I like a bit of the crunch there.
