Heh. I said *look* like. I'd be willing to bet our moms were roughly of a generation, and it wouldn't surprise me if got their salmon croquette recipes from a similar source (Betty Crocker? Fannie Farmer? Some women's magazine of the day?)
I made crab cakes last night, light, moist and crispy, and mused on how very little they resembled the greasy, crab-flavored dough-balls that were the first crab cakes I ever tried...
I'm betting a whole generation of us never encountered salmon in any other form till we were adults (except, maybe, for the ones who lived in salmon-fishing country).
Two of my mother's sisters lived in Seattle. They'd send a salmon back to the wild prairies o' Dakota once every five years or so... ok, maybe ten years or so, so I seen 'em.

Somebody is frying them in EVOO. My suggestion to use butter fell on deaf ears.
