The Perfect Match With Pig’s Tails

BICYCLETTE Adapted from Fergus Henderson

2 ounces Campari.

1 ½ounces dry white wine.

Add Campari to a wine glass, fill 2/3 up the glass with ice and add wine. Stir, taste and adjust as desired.

Yield: 1 serving.

Well, I love campari & soda and I drink kirs occasionally, so I guess I'll have to try it. But my mouth is dubious, for some reason. Have you tried it?

Conveniently, I do a bottle open, so I tried it last night. It was okay, but I liked it better after adding enough wine to make it more like kir proportions. Campari kir, not a bad idea when creme de cassis just sounds too cloying. Plus it REALLY overwhelms the taste of mediocre wine. The cheap grunerveltliner we had was made for it.
