Nuns are credited with creating many of the country’s pastries, and some say the egg yolk became a central ingredient in Portuguese baking because the nuns used so many egg whites to starch their attire. Moar

Nuns are also credited the idea of mixing sugar and milk fats with chocolate, because it was considered medicinal but too bitter for kids. I've never actually researched this to know if it's true.
