Pancakes?

Organic Cafe Latte Greek Yogurt Pancakes

Serves 3
A new twist to a classic!
Ingredients
5.3 oz Stonyfield Cafe Latte Greek Yogurt
1 egg
1/2 up Whole Wheat Flour
1 tsp baking soda
1/2 tsp Expresso Instant Coffee
2 tbsp Milk (to thin)

Instructions
Preheat griddle or sauté pan
Combine the yogurt with your egg and mix well.
Add flour and baking soda
You can make the pancakes from this step but I like my pancakes thinner so I add milk one tbsp at a time and mix well.
Spoon a heaping tablespoon size onto the griddle (or pan) and use the back of the spoon to squish it as flat as possible.
When the pancakes start to bubble and the side look firm flip the pancake.

Mpls has instituted odd side parking for non snow emergency routes. (Check with the city if you have any questions.) The snow is winning. The parking ban goes into effect at 8:00 am Sunday morning. In my area of mixed housing, ittsa catastrophe of the highest order. On the other hand, possibly two bicycles could pass on 27th Street, not two cars. Lyndale, which is normally four lanes, is down to two. I'm sure Lake Street is a similar mess. (The "traffic quieting" sure helps narrow the street in the winter. I just love ideas adopted from more southern cities up here in the Northland...)
