I don't know, using cake flour and bread flour for a cookie seems a bit fussy. Also cake flour tends to be more expensive and difficult to find in bulk. I usually can just find a box of it.

Ya gotta expect 500 ingredients or something totally different.

I suspect you could sub bread flour without huge problems. It's going to be a bit tougher is all. (More gluten.)
