The alchemist behind the counter at Lulu & Mooky’s pours a sweetened dairy mix into a KitchenAid mixer, adds one of dozens of flavoring essences (said to be all natural) and seconds later, with a cloud of liquid-nitrogen vapor, creates a couple of scoops of ice cream that would make Heston Blumenthal proud. Seth Tapper came up with this after “hours and hours of trial and error” in consultation with some scientists. The place bears the nicknames of his daughters. More
